Mozzarella & Serrano Jamon Pizza

Makes 1 pizza
1 good quality large pizza base, or you can make your own.
1/3 cup tomato passata
1 clove garlic, crushed
2 tbsp extra virgin olive oil, plus extra to serve
150g mozzarella, sliced or torn
Flake sea salt, fresh ground black pepper
4 slice serrano jamon
Large handful wild rocket
Handful basil leaves
Preheat an oven to 230C
In a small bowl combine the tomato passata, garlic, 1 tbsp olive oil and a little salt
and pepper.
Spread the pizza base with this sauce then scatter the mozzarella, drizzle with 1 tbsp
of olive oil, a sprinkle of salt and crack of pepper.
Bake directly on the oven racks for 6-8 minutes, until the base is crisp and golden.
Cut into 4-6 pieces.
Toss the rocket and herbs in a little olive oil and seasoning.
With the jamon, scatter over the cooked, cut pizza to serve.
