Makes 2 Sandwiches
Ingredients
Francesinha sauce
2 tbsp olive oil
1 small brown onion, finely diced
2 clove garlic, finely chopped
Salt, pepper
2 tbsp tomato paste
1 tbs unsalted butter
200ml lager style beer
400ml beef stock
1/3 cup good quality BBQ sauce
200g sirloin or scotch fillet, grilled or pan-fried to medium rare, thinly sliced
1 small chorizo, cooked, thinly sliced
4 ham slices
6 slices cheddar cheese
4 slices large white sourdough
1 tbsp unsalted butter
2 fried eggs
Method
Make the sauce in advance and reheat when you need it.
For the sauce, place a small pot over a medium/high heat and add the olive oil, onion, garlic and a good pinch of salt. Cook for 3 minutes, stirring, until the onion is soft, then add the tomato paste and butter and cook for another minute.
Add the beer and reduce by half, then add the beef stock and BBQ sauce and simmer until slightly thickened, about 5 minutes.
Blend everything in a blender and season to taste. You want a gravy like consistency.
For the sandwiches, prepare the chorizo and beef as instructed.
Preheat an oven grill.
Toast the bread and butter both sides.
Layer the sliced beef, chorizo and ham and 1 slice of cheese.
Top with the other slice of bread then 2 slices of cheese over each sandwich so it covers the top and hangs over the side.
Place the sandwiches onto a tray and under the grill until the cheese is melted and beginning to caramelise, about 2 minutes.
Serve the sandwiches topped with a fried egg and the sauce, hot, poured over.
